In Touraine, wine does more than accompany life’s moments, it shapes their very essence. Its landscapes, history, and culture have borne its imprint for centuries.

Driven by the desire to create the Gâteau de Rabelais as a true tribute to the Loire Valley terroir, incorporating wine into the very heart of this creation naturally became an obvious choice.

Maison Linotte chose Vouvray, an emblematic appellation of the Loire Valley celebrating its 90th anniversary this year. Made from a single grape variety, Chenin Blanc, also known as Pineau de la Loire, Vouvray wines reveal a distinctive aromatic richness and a perfect balance of freshness, elegance, and generosity, making them precious allies in the crafting of Maison Linotte’s gourmet creations.

A WINE OF DISTINCTION AT THE HEART OF THE CREATION

To bring this vision to life, Maison Linotte traveled to Vernou-sur-Brenne, in the heart of the AOC Vouvray, to meet Julien Pinon, a Vouvray wine producer and heir to a family know-how passed down through eight generations.

On his estate, he crafts wines of remarkable precision using organic viticulture, in full respect of the living environment and natural balances, a vision perfectly aligned with the values upheld by Maison Linotte.

It is his 2023 Vouvray Moelleux that Maison Linotte selected for the creation of the Gâteau de Rabelais. This outstanding Chenin Blanc combines freshness with intense gourmandise.

In the cake, its rich and elegant aromas of quince jelly, mirabelle, pineapple, and mango blend subtly with the sweetness of almonds and the generosity of Touraine honey, giving the creation a unique aromatic signature and a delicate elegance on the palate.

On the occasion of its 90th anniversary, the Vouvray appellation is celebrating its history, its craftsmanship, and the excellence of its terroir.
